There are additions to the BYOD system including updates to the manufacturer section in version 2.8.0 and version 2.9.0.HA.
However, in general the operating system and some of those other parts of the profile are pulled using DHCP option 55. Most devices report info in option 55 when they pull DHCP, but unfortunately for the devices that don't there is not a way to identify them other than by the manufacturer OUI which is something we try to keep up to date using the OUI database. So if a device shows up as unknown chances are this info is not being reported (most newer devices do report the information). You can, however, verify this by taking a packet capture on the client and looking for the DHCP messages it sends to the server. This can also be done on the AP.
