I'm not sure what they mean by a "universal Cat6 connector", but would guess that it's an 8-pin modular jack. Cat6 is certainly far more than adequate for an analog fax machine. A standard RJ-11 plug will fit an 8-pin jack and make contact with the middle two pins which will work for your fax machine.
On the TA908e you can either punch down 25-pairs to the Amphenol connector or get a "harmonica" type connector which is far easier if you're only using one or two FXS ports. We use the Allen-Tel AT153AM-01 available at Graybar, Amazon, etc.
Thanks Jay. That answers my question. By universal he meant it will accept the RJ-11 as well. I am in the process of learning.
